FROZEN CRUSHED LEMON FROM MENTON WITH 22% SUGAR - PONTHIER - 6 x 1 kg
The Menton Lemon IGP is grown confidentially by passionate citrus growers. The lemon trees flourish in an enchanting location, on the terraced slopes above Menton, facing the Mediterranean Sea. They leave their mark on the landscape. The Menton Lemon, a fruit of gold and sunshine, is richer in sugar than elsewhere in order to withstand the cold. They offer a sweet, floral and fresh flavour, intense aromas and a remarkable length on the palate. Fabrice Puech’s lemons are grown on an old family plantation with trees that are hundreds and even two hundred years old, irrigated with spring water from the mountains of the hinterland. They ripen on the tree, undergo no treatment and are harvested by hand. These gentle cultivation methods allow the skin of the citrus fruit, which is very fragrant and finely grained, to be consumed. This very exclusive fruit inspired Ponthier to create a broyé recipe made from whole lemons. In Ponthier’s workshops in Objat, the lemons are trimmed and seeded, cold-preserved to reveal the full power of their aromas, and then crushed. The crushed lemons add intensity and texture to pastry creations and can be used as is or crushed more finely if necessary.
